Another yummy meal

Tonight we tried a new recipe that I found at Roots of Healthy Living. It is a site kept by a long time family friend Terri (actually, I think Terri and her husband were on the first Grand Canyon trip that Marcus and I were on together).

Back to the great dish...

It is Lettuce Wraps with Honey Peanut Sauce. AMAZING. I think Marcus said three different times during dinner how great they tasted. He was a little leery at first because he absolutely loves iceberg lettuce and I was using romaine but no worries. They were fantastic. Both girls ate full helpings. I wish I had a picture. Ingredients:
2 chicken breasts or one rotisserie chicken OR one block of extra firm tofu
1-2 TB Olive Oil
Onion Powder to taste
Garlic Powder to taste
Grated Ginger
Orange Peel
Juice of One Orange
Nama Shoyu (or soy sauce) to taste

Terri's instructions:
I don't like to eat a lot of meat so I did chicken for the family and tofu for Jeff and I. I went to the local health store and bought a hormone free rotisserie chicken, diced it up in a pan with a little olive oil. I added some grated ginger, onion powder, garlic powder and orange peel. I added the juice of one orange and plenty of Nama Shoyu (a type of soy sauce) and let it heat through.

The tofu is easy to use instead. I like the extra firm blocks of tofu. I diced it up in bite sized pieces and cooked it just like I did the pan of chicken.

Salad Wraps:
One head of romaine lettuce
match stick carrots
shredded cabbage

Peanut Sauce:
1/4 cup Adam's Peanut Butter (or other natural peanut butter)
1/4 cup raw honey
1-2 TB Nama Shoyu, Bragg's Liquid Aminos, or Soy Sauce
2 TB rice vinegar
a little hot water to thin if needed

My notes:

The best part about using Romaine lettuce (other than the obvious nutritional value) is that it is flexible but sturdy. You can use it like a tortilla so it was easy for the girls to eat with and much cleaner for Marcus and I as well.

While cutting the cabbage I was munching on a couple of pieces and Reagan and Ainsley wanted to have some also. There we were, in the kitchen munching on raw cabbage. It was another moment that confirmed for me that our kids will love the things that we love whether it be cabbage (or other veggies) or chicken nuggets and french fries.

I also had an ah-ha moment when i was eating cabbage and really LOVING it. I always thought I disliked cabbage because the only way I ate it as a child was in coleslaw (still can't stomach the stuff to this day) or cooked with spiced corn beef. I am finding now that our entire family really likes cabbage and I will have to find more recipes using raw cabbage.

This does sound yummy! I will have to try it out. :) So fun to catch up on your blog. I can't believe all of Ainsley's curly hair...too cute. Congrats on getting the Van. Are you just loving it? And I loved your post on Motherhood and the talk with Sister Beck. I love that one as well for the same reasons. :)
