Crock Pot Meals

Hey Everyone,

In just six days we move into our new house, without a kitchen. Our kitchen will arrive (in the form of my dad) about a week and a half later. Since the thought of eating out for 10 days makes my stomach churn I have decided to put my crockpot to good use. I am looking for easy, mostly meatless crockpot meals that are child friendly. A little bit of a tall order but any suggestions or recipes you can pass my way would be appreciated.

I have a white enchilada recipe that you *could* do in a crock pot. I'll tell you tomorrow.

You could do crock pot stew minus the meat. Carrots, peas, potatoes, tomatoes, corn, squash, beef broth, salt, pepper, garlic, onion, and wochestshire sauce. Mmmm that sounds good. Maybe I will make that.

You could make crock pot spaghetti too. Do your red sauce, and try cooking the noodles right in the sauce. I wonder if that would work.

We got a great crockpot for our wedding but we haven't used it yet. The black bean soup I posted last week can probably be done in a crock. I will have to look for other recipes and let you know!! Good luck with the house!! I wish you could just come over to my place every night. We love feeding friends!
